Rice-a-Roni is great I grew up on it and I love it. Homemade pressure cooker Rice-a-Roni is even better.
Now days we are more aware how the packaged (center of the store) products are not that good for us. High in sodium and sugar in places you would never expect. This is why I like to create homemade versions of packaged food, so there are no unexpected ingredients, and I can make it better for my family.
Like with my Homemade Hamburger Helper I wanted to make Rice-a-Roni homemade. Can it be done? Well I think so. On top of making a homemade version, I decided to go one step further and make it in the pressure cooker. I am picky about the outcome. It has to taste like the box to pass the test.
My kids loved it and I thought I nailed it. It was not as salty as the store and that is ok with me but I thought the flavor was on, and if you feel like it needs more flavor, bump the spices just a bit.
Easy enough you add all the spices, butter, pasta, rice and water to the pressure cooker set on High Pressure for 4 minutes, NPR 10 minutes and it’s done. No watching over the pot to boil, not worrying about over boil or cooking for 20 minutes. Cook the rice while you grill chicken and sausages, like we did and dinner is fast easy and healthier than from a box.
